The Underground Cathedrals are wine temples, a tribute to the genius of man’s work, who digged these unique wine cellars up to 32 meters underground. These are true engineering and oenological architecture masterpieces. In those cellars thousands of bottles are kept at a constant temperature and looked after with special procedures in order to obtain some among the most famous wines in the world. This is a tradition which, for more than two hundred years, has made Canelli as the capital of the Italian spumante.
A landscape characterized by gentle hills, the area of Nizza (better known as Barbera d’Asti Superiore) is the first area of diffusion and cultivation of the Barbera vine, an area traditionally linked to the system of the farming cooperation: the Wine Cooperative of Vinchio, Vaglio Serra, is a clear example of it. The area includes further important testimonies of the culture of wine such as the Bersano Museums which house a large collection of tools to be used in the vineyard and elements of the rural culture. The town of Nizza Monferrato, capital of Barbera wine, is also an exceptional example of medieval historical centre.
The “Infernot” are small attachments of wine cellars digged in a special sandstone rock called “pietra da cantoni” and void of light and natural ventilation. Normally they are located under the houses, the courtyards and sometimes even under the streets of the hills of Monferrato. The Infernot were small areas used as a pantry or wine cellar and digged, during the long winters, by local sculptors. Still used nowadays, they are veritable works of art and they represent the rural and peasant culture of these hills. Great examples of the Infernot can be found in the Ecomuseum of the “Pietra da Cantoni” in the village of Cella Monte and also in the villages of Vignale Monferrato and Sala Monferrato.
